Allahabadi Tehri Recipe

Ingredients Allahabadi Tehri:

  1. 1.5 Cup Long grain basmati rice
  2. 1 Onion
  3. 1 Potato
  4. 1 Cup Cauliflower florets
  5. 1/4 cup Carrot
  6. 1/4 cup Green peas
  7. 1 Cup yogurt
  8. as required Mustard oil
  9. 1/4 tsp Hing
  10. 1 piece cinnamon stick
  11. 3 cloves
  12. 1 bay leaf
  13. 2 green cardamoms
  14. 1 Black cardamom
  15. 1 tsp peppercorns
  16. 4 garlic cloves
  17. 1 piece ginger
  18. 1 tsp turmeric
  19. 1 tbsp red chilli
  20. 1 tbsp coriander powder
  21. 1 tsp cumin
  22. 1 tbsp lemon juice

How to cook Allahabadi Tehri:

  1. Wash and soak basmati rice for 10 minutes.

  2. Heat oil in a pan. Add hing and all other whole garam masalas and fry.

  3. Now add thinly sliced onions and sauté it until translucent and add roughly crushed ginger and garlic and sauté until the raw smell goes.

  4. Now add all the powdered masalas and fry it. Then add all the veggies and sauté it until slightly golden. Add whisked yogurt and sauté until the mixture comes together.

  5. Now add washed rice and lightly fry it. Add 3 cups of water
