Lemon & Oregano Chicken Bake Recipe

Ingredients Lemon & Oregano Chicken Bake:

  1. 4 chicken thighs
  2. 1 tbsp olive oil
  3. 1 onion diced
  4. 1 lemon zest and juice
  5. 2 garlic cloves minced
  6. pinch chilli flakes
  7. 2 tsps oregano
  8. 180 g basmati rice
  9. 550 ml chicken stock
  10. salt and pepper for seasoning

How to cook Lemon & Oregano Chicken Bake:

  1. Preheat the oven to 180 oC

  2. Season the chicken thighs with salt and pepper
    Heat the olive oil in a large shallow pan over a medium to high heat

  3. Place the chicken thighs skin down in the pan and cook until crisp
