Mackerel Thai Red Curry Recipe

Ingredients Mackerel Thai Red Curry:

  1. 4 mackerel fillets
  2. 1/3 jar Thai red paste
  3. 1 tin coconut milk
  4. 1/2 onion
  5. Fresh chilli
  6. I served mine with
  7. Green beans
  8. Broccoli
  9. Manoushe

How to cook Mackerel Thai Red Curry:

  1. Finely chop onion and chilli. Fry with Thai red paste.

  2. Chop up mackerel and add to pan once onion is coloured.

  3. Fry for 5 minutes and then add the coconut milk. Simmer for 15 minutes.

  4. Serve with your favourite veg and carbs!
