A tempting rich meaty tomato sauce with tasty vegetables, just a hint freshly chopped basil. Pasta Bolognese is probably one of Italy’s best known and loved dishes
1 large onion
2 large sticks celery
2 large carrots
8 oz /225 g tomatoes
4 oz /100 g mushrooms
12 oz /350 g lean minced beef
2 oz /50 back bacon
2 tablespoon olive oil
1/2 pint /300 ml beef stock
1-2 table spoon tomato puree
salt and freshly ground black pepper
1 table spoon freshly chopped basil
12 oz /350 g pasta spaghetti freshly grated parmesan cheese
peel the onion and chop finely tnim and wash celery chop finely scrape or peel the carrots trim as this will help to break up the mince and keep the meat separate.when browned
Drain through a colander to remove any excess fat.wipe the pan with absorbent paper
Dennis the bacon and cut into small strip heat the oil in the pan then gently fry the bacon and chopped onion for 5 mins or until the onion is soft and transparent.add the chopped celery and carrots and continue to fry for a further 3 mins
Return the mince to the pan with the chopped tomatoes and mushrooms fry for a further 5 mins then pour in the stock blend tomato puree with 2 tablespoon of water and stir into pan together with seasoning and the freshly chopped basil bring to the boil then simmer gently for 35-45 mins or until the meat is cooked and the vegetables are tender but not mushy. Adjust seasoning. Meanwhile bring a large pan of lightly salted water to a rapid boil.
Holding the pasta in a bundle gently lower into the boiling water.
As the pasta soften it will gradually curl around the pan. Cook for 10-12 mins or until it is al dente this is when the pastas soft but still has a slightly chewy texture. Drain well mix the Bolognese sauce into the cooked pasta and serve immediately with freshly grated parmesan
If you wish to cook the sauce in microwave place meat in a shallow dish and microwave on high uncovered for 5 mins. Drain off meat. Reserve 3 tablespoon of juices in dish add prepared vegetables stir and microwave uncovered on high for 3 mins stir well cover and microwave on high for 10-12 mins or until sauce is thick.
If liked you can include 4 oz /100 g chopped cleaned chicken livers in the recipe just add them to the mince when browning.
How to prepare
1, prepare ingredients wash celery carrots , mushrooms. Peel chop onion
2. Dry fry the minced beef over a gentle heat stirring frequently until browned
3,fry onion and bacon in the olive oil then add remaining chopped vegetable
4, Return the beef to the frying pan then add the peeled chopped tomatoes
5, After adding the mushrooms to the pan, pour in the water and then stock
6, Bring a pan of lightly salted water to a rapid boil slowly add pasta spaghetti
