1. In a medium bowl, combine the sliced beef with the cornstarch, salt, and black pepper. Toss to coat. Set aside.
2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the beef and cook until browned on all sides, about 3-4 minutes. Remove the beef from the skillet and set aside.
3. Add the onion and garlic to the skillet and cook until softened, about 2-3 minutes.
4. Add the cabbage to the skillet and cook, stirring frequently, until it starts to wilt, about 3-4 minutes.
5. Push the cabbage to the sides of the skillet, creating a space in the center. Add the beef broth, soy sauce, oyster sauce, sugar, ginger, and red pepper flakes (if using) to the center of the skillet. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.
6. Stir in the beef and cook until heated through, about 1-2 minutes.
7. Garnish with chopped cilantro and serve immediately over rice or noodles.
Tips:
For a spicier dish, add more red pepper flakes. If you prefer a milder flavor, omit the red pepper flakes altogether.
You can use any type of beef for this recipe, but sirloin is a good choice for its tenderness and flavor.
If you don't have beef broth, you can substitute with chicken broth or water.
For a vegetarian version, use firm tofu instead of beef.
