For the Cake:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 3/4 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup whole milk
For the Tres Leches Mixture:
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) can evaporated milk
1 cup whole milk
1 teaspoon vanilla extract
For the Topping:
1 cup heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
Fresh berries (strawberries, raspberries, blueberries) for garnish (optional)
Preparing the Cake:
1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and beat until just combined. Do not overmix.
4. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
5. Let the cake cool completely in the pan before proceeding to the next step.
Preparing the Tres Leches Mixture:
1. While the cake is cooling, prepare the Tres Leches mixture. In a large bowl, whisk together the condensed milk, evaporated milk, whole milk, and vanilla extract.
Soaking the Cake:
1. Once the cake is completely cooled, carefully poke holes all over the surface using a fork. This allows the milk mixture to penetrate the cake evenly.
2. Slowly pour the Tres Leches mixture over the cake, ensuring the entire surface is covered.
3. Refrigerate the cake for at least 4 hours, preferably overnight, to allow the cake to fully soak in the milk mixture.
Making the Topping:
1. In a large bowl, beat the heavy whipping cream with the powdered sugar and vanilla extract until stiff peaks form.
Assembling the Cake:
1. Once the cake has been refrigerated, spread the whipped cream topping evenly over the soaked cake.
2. Garnish with fresh berries, if desired.
3. Refrigerate the cake for at least 30 minutes before serving.
Tips for Perfect Tres Leches Cake:
Don't overmix the cake batter. Overmixing can lead to a tough cake.
Ensure the cake is completely cool before adding the Tres Leches mixture. If the cake is still warm, it will absorb too much of the milk, making the cake soggy.
Let the cake soak in the milk mixture for at least 4 hours, preferably overnight, to allow the cake to fully absorb the flavors and become incredibly moist.
Experiment with different flavors! You can add a pinch of cinnamon to the cake batter, a splash of rum to the milk mixture, or a drizzle of chocolate ganache on top of the whipped cream.
This recipe can easily be doubled or tripled for larger gatherings.
