Tips and variations:
You can use any type of ground meat you like, such as turkey, chicken, or sausage.
Feel free to add other vegetables to the casserole, such as corn, green beans, or mushrooms.
If you don't have any cooked rice on hand, you can use cooked pasta or even mashed potatoes.
For a spicier casserole, add a pinch of red pepper flakes to the beef mixture.
If you're looking for a lighter version, you can use low-fat ground beef and skim milk.
Top with a dollop of sour cream or a sprinkle of fresh herbs for extra flavor.
Storage:
Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze the casserole for up to 3 months. To reheat, thaw in the refrigerator overnight and then bake at 350 degrees F (175 degrees C) for 20-25 minutes, or until heated through.
